Get yourself in the mood.....Ingredients for a vegetable samosa* 9 sheets of filo pastry* 1 tsp of cumin * olive oil * 1 tbsp of coriander * 450g potatoes, chopped into 1/2 inch pieces * 2 minced onions * 60g chopped fresh cilantro * 1/4 tsp of cayenne pepper * dash salt and pepper to taste * 300g shelled peas, drained |

Preparation method
1. Pre-heat oven to 200°C.
2. Heat olive oil in a large frying pan over medium high heat. Add onions and sauté for aprrox 6 mins until soft.
3. Add the cumin, cayenne pepper and coriander to the pan and cook for a further minute. Take pan off heat and stir in the cilantro, peas and potatoes. Season.
4. Pile 3 sheets of filo pastry on top of eachother and then, using kitchen scissors, cut into 4 rectangles of equal size. Do the same for the remaining sheets of filo and then cover with plastic wrap.
5. Add three tbsp of the samosa filling to the corner of the dough, before rolling the corner towards the centre. Tuck in the corners and then roll up again.
6. Place the samosas on a baking tray, and brush with olive oil. Bake for approx 20 mins until they have turned a golden brown.
